I used the salt and pepper, and then fresh rosemary, and dried thyme and sage. 1 Tbsp fresh rosemary, couple of pinches each of dried thyme and sage. Oh, and I used olive oil.
I stuffed the dear thing with half a lemon, 5 cloves of garlic, 2 carrots, 1 stalk of celery, and between a quarter and a half of an onion.
It would be delicious if you made a side of roasted vegetables to go with the chicken… such as these Honey Glazed Roasted Vegetables.
