Crepes (quick & easy)

This is how my Grandma always makes them.

  • 1 cup Bisquick
  • ¾ cup milk
  • 2 eggs

Mix together the ingredients. Heat 7-8 inch pan to med-high. Spray the pan with pam between each crepe you make. Use 2-3 Tbsp batter for each crepe.

Sweet filling:

  • Mix about 5:1 ratio of cottage cheese to sour cream. Mash together really well; should be pretty smooth. Add powdered sugar if you think it needs it.
  • Pair this with fruit. Nectarines are really good. Or you can put jam and whipped cream on it.

If you’re weird and want a savory filling:

  • Mix about 5:1 ratio of cottage cheese to sour cream. Mash together really well; should be pretty smooth. Add parmesan cheese and spices. Add milk if it’s too thick.
  • Pair this with cooked vegetables. For example: preheat oven to 350. Lightly coat a baking dish with olive oil. Chop your choice of veggies and put in pan. Sprinkle salt and pepper over the top. Bake until soft-crisp, stirring around occasionally. I used Broccoli and Zucchini. I added canned corn after the veggies were cooked.
