Awesome Scrambled Eggs

So I felt like putting a bunch of junk in my scrambled eggs this morning, and we actually had stuff to put in! I made it for myself and my brother to share, and we both liked it a lot, so I figured I would write down what I did.

Serves 2

  • 5 eggs
  • Splash of milk
  • 3 small corn tortillas
  • Tomato, Onion, and Turkey (however much seems right)
  • Pepper-jack & colby jack cheese (about a handful)
  • Spices: fresh ground black pepper, 21 seasoning salute, basil, garlic salt, crushed red pepper
  • Butter/Margarine


Stick a cast-iron skillet over medium heat and put some margarine in. While it heats, slice up the corn tortillas, then put them in the skillet. Cook them for 2 or so minutes, stirring occasionally. While they’re cooking, beat your eggs with a splash of milk, and chop up your onion, tomato, and turkey. Remove the tortillas from the skillet and put them somewhere to wait. Put some more margarine in the pan, then pour the eggs in. Get your spices in there and stir it around. Add the onion and turkey after a bit. Stir occasionally. When it’s getting close to done, add the tomato and the tortillas. Right before you take it out of the skillet, stir in the cheese.
