Strawberry Cheesecake Cupcakes

These little darlings make me very happy. They have this delicious cheesecake texture but it’s regular cakey at the same time… so they’re not super heavy… but they’re oh-so-good. And they have chopped strawberries inside! And there’s cream cheese frosting! With a strawberry on top!

Makes 12 cupcakes
For the cupcakes:
  • ¾ cup flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 6 Tbsp butter, room temperature
  • ½ cup + 1 Tbsp sugar
  • ½ tsp vanilla
  • ¼ cup sour cream
  • 2 large egg whites
  • Rounded ¼ cup fresh strawberries, hulled & coarsely chopped (measure them after they’re chopped).
  • 12 Nilla wafers


  1. Preheat oven to 350 F and line muffin tins. Drop a Nilla wafer into each muffin hole (muffin hole? I don’t know what else to call that! whatever).
  2. In a small bowl, mix together the flour, baking powder & salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Add the vanilla, beating on low-speed. Add half the flour mixture, beating until incorporated. Mix in the sour cream. Add remaining flour and mix until just blended.
  4. In another bowl beat the egg whites until stiff, glossy peak appear. Gently fold 1/3 of the egg whites into the batter to lighten it, then fold in the remaining egg whites just until there’s no trace of egg white visible. Fold in the chopped strawberries. Make sure not to over-mix the egg whites or the cake will fall flat!
  5. Fill each muffin tin about ¾ of the way and bake for about 17-20 minutes depending on your oven (check after 15 minutes though!). You can test the doneness by sticking a toothpick through the center; if it comes out clean they are ready to come out.
For the frosting:
  • 4-oz cream cheese, softened
  • 4 Tbsp butter, softened
  • ¼ tsp vanilla extract
  • 1 cup confectioners’ sugar


In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy. Spread icing on cupcakes and garnish with fresh cut strawberries.
