Chocolate Chip Cranberry Oatmeal Cookies

These cookies are soft and chewy, almost lacy, absolutely mouthwatering. And you can do pretty much anything with them, which I love! I put chocolate chips and dried cranberries… but get creative, guys. That’s just what I had on hand. I would like to try white chocolate chunks and macadamia nuts at some point.

  • 1 cup oatmeal
  • 1 cup flour
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • 8 Tbsp (1 stick) butter, slightly softened
  • ½ cup brown sugar (packed, of course!)
  • ½ cup sugar
  • 1 tsp vanilla
  • 1 egg
  • ½ cup semi-sweet chocolate chips
  • ¼ cup craisins (dried cranberries)
  1. Preheat oven to 350 degrees F, and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, oatmeal, baking powder, baking soda, salt and cinnamon. Add the chocolate chips and craisins and toss to combine.
  3. In another bowl, beat the butter, sugars and vanilla together. I beat it for about 2 minutes. Then add the egg and beat again until creamy.
  4. Add the creamy ingredients to the dry ingredients and stir well with a wooden spoon.
  5. Scoop out cookie dough in Tbsp-size balls and place on a parchment lined baking sheet.
  6. Bake for 10-12 minutes (check them at 10 minutes). The secret is this: Do NOT over-bake! Take them out even if they don’t look done and give them a chance to cool; they will set up. This makes a chewy, soft and in every way delicious cookie.
